Pigeonhole just opened for business and it has everybody talking in Calgary. It’s Justin Leboe’s creation featuring an experience where they’ve mashed up a snack bar and a wine bar. The former Model Milk was restored into Pigeonhole and now offers a great experience from creative sharing dishes to a unique wine list in a casual atmosphere. The Food

The food is intended to be shared with plates big enough for two. Even if you’re just stopping in for a drink and a quick bite, a late night snack or an extended stay, all of the menu items are perfect for these occasions and more. Just be aware that plates are huge and everything is in bit size portions making it perfect for everyone at your table to grab one. Some of the best plates include the nor crumpets, the salted halibut perogies and the edamame with crème fraiche, three dishes that will make you want to order another.

The Wine

Don’t miss out on the alternative wine list that is unlike regular restaurants and bars. Your standard bar is going to focus on popular wine brands while Pigeonhole features “natural wine,” a new term to Calgary dining. These wines have received little intervention during the winemaking process to create a more natural, organic and biodynamic wine. Enjoy the thoughtful and approachable collection at Pigeonhole from reds to whites where you can sample area selections or try unique French varieties.

The Vibe

When you arrive, you’ll notice the neon letters spelling Pigeonhole on top of a vintage outdoor sign, an unusual look for this street from past memories of the area. You’ll love the renovated space with the exposed brick, psychedelic wallpaper, original artifacts from when it was once “Victoria’s,” and a vintage chandelier in the dining room. It’s a casual atmosphere with a European vibe and Parisian café feel.
